Grand Prize Recipes

CHICKEN TAMALES
2 cups of maseca (corn flour) for tamales
2 cups lukewarm broth or water
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup lard or vegetable oil
1 pound of boneless chicken
32 oz. red mild salsa
16 corn husks

Combine maseca, baking powder, salt, broth or water, lard or oil and mix with your hands until dough is a spongy texture. Put aside.

In a small bowl, cut chicken in small pieces (chicken is already boiled) and mix with the salsa. Soak the corn husks for a few minutes and rinse. Spread masa evenly over corn husks. Place a tablespoon of chicken mixture in the center. Fold all sides to the center and place in steamer. Cover with a wet cloth and steam for approximated 1 hour.
Serves 6 – 8.

APPLE CAKE COCKAIGNE
Preheat oven to 425 F.

1 cup all-purpose flour
1 tsp. baking powder
¼ tsp. salt
2 tbsp. sugar
Add:
1-1/2 to 3 tbsp. butter
Work these ingredients like pastry.

Beat will in a measuring cup:
1 egg
½ tsp. vanilla
Add enough milk to make a ½ cup mixture.

Combine with the flour and butter to make a stiff dough.
Pat dough into a greased 9 or 10-inch round pan and then push fruit sections into dough overlapping them. Use about 4 cups sliced, pared apples.

Sprinkle with a mixture of:
1 cup brown sugar
2 tsp. cinnamon
3 tbsp. melted butter

Bake about 25 minutes.
